Pan-Grilled Shrimp with Indonesian Spices

Ingredients

  • 1/2 kg shrimp
  • 1 tablespoon lime juice
  • 1 stalk lemongrass

Ground spices

  • 5 curly red chilies
  • 4 shallots
  • 3 garlic cloves
  • 2 cm ginger
  • 2 cm turmeric
  • 2 cm galangal
  • 2 candlenuts
  • salt to taste
  • soy sauce to taste
  • sugar to taste

Preparation

  1. Wash the shrimp and marinate with lime juice and a little salt, then set aside.

  2. Grind all the spices into a paste.

  3. Sauté the spice paste with lemongrass in a pan, add salt and sugar to taste, and adjust seasoning.

  4. Add the marinated shrimp to the pan and cook on low heat, stirring occasionally, until the shrimp is cooked and the sauce is dry.

  5. Coat the shrimp with sweet soy sauce while cooking to prevent burning.

  6. Remove from heat and serve.
