Indonesian Betutu Chicken Stew
Ingredients
- 1 free-range chicken
- lime juice (for rubbing, quantity not specified)
Spice blend
- 110 g shallots
- 7 cloves garlic
- 3 candlenuts
- 1 tablespoon coriander seeds
- 1 tablespoon dried shrimp
- 1 piece turmeric
- 3 pieces ginger
- 3 pieces galangal
- 4 pieces lesser galangal
- 4 stalks lemongrass
- 30 bird's eye chilies or to taste
- 1 tablespoon sugar
- 1 teaspoon pepper
- salt to taste
Preparation
Wash the chicken and rub it with lime juice, then set aside.
Coarsely chop all the spices.
Sauté the chopped spices in oil until fragrant.
Add the chicken and stir well to coat with the spices.
Add enough water to cover the chicken, then add sugar and salt. Braise until the chicken is tender and the spices are absorbed, about 1.5 hours, and adjust seasoning to taste.
Leave a little water in the pot to prevent the dish from drying out.
Tips
Prepare a mild or spicy version by adjusting the amount of chilies.
Cooking time may vary depending on the chicken size and heat source.
