Indonesian Sweet Fried Chicken
Ingredients
- 1 whole chicken, can be cut or left whole
- Cooking oil, in generous amount
Boiling spices
- 1500 ml coconut water
- 100 g palm sugar
- Thumb-sized piece of ginger
- 100 g galangal, sliced
- 2 stalks lemongrass, bruised
- 1 tablespoon coriander powder
- 7 shallots, minced
- 5 cloves garlic, minced
- 5 bay leaves
- A little tamarind
- Salt and sugar to taste
Preparation
Boil the chicken with the boiling spices on low heat until tender and the liquid reduces.
Refrigerate for at least one night to allow the flavors to absorb.
Fry in hot oil briefly until the color darkens slightly, do not fry until dry to avoid burning due to high sugar content, then remove and serve.
Tips
This is a type of wet fried chicken and should not be fried until crisp as it contains a lot of sugar which can cause it to burn.
