Spicy Sour Chicken Wrapped in Banana Leaves

Ingredients

  • 250g chicken
  • 2 small garlic cloves
  • 5 shallots
  • 10 bird's eye chilies, to taste
  • 2 kaffir lime leaves
  • 1 bay leaf
  • 1 lemongrass stalk
  • 1 slice galangal
  • 1 slice ginger
  • 1 tomato, quartered
  • 2-3 bilimbi fruits
  • Coconut milk from 1/4 coconut, as needed
  • Salt, sugar, and seasoning, as needed
  • Banana leaves for wrapping

Preparation

  1. Wash the chicken clean, boil briefly to remove impurities, drain, and fry until half-cooked.

  2. Slice the chilies and onions, then sauté until fragrant. Add kaffir lime leaves, bay leaf, galangal, and ginger. Add the chicken and sauté briefly.

  3. Add coconut milk, salt, sugar, seasoning, bilimbi, and tomato. Cook until the coconut milk is reduced and oily. Take a banana leaf, place the chicken on it, tie with a skewer, place in a heat-resistant container, and steam for about 20 minutes.
