Indonesian Simba Fish Head Stew

Ingredients

  • 1 whole Simba fish head, split
  • 4 bay leaves
  • 2 stalks lemongrass, smashed
  • 4 kaffir lime leaves
  • 3 cm galangal, smashed
  • 1 teaspoon sweet soy sauce
  • 1 teaspoon soy sauce
  • sugar and salt to taste
  • bird's eye chilies and pineapple to taste
  • water as needed
  • tomato (quantity not specified)

Ground spices

  • 3 cloves garlic
  • 5 shallots
  • 5 red chilies
  • 3 cm ginger
  • 3 cm turmeric

Preparation

  1. Wash the fish head clean, then boil it with water, adding a little salt, lemongrass, bay leaves, and ginger. Boil briefly, then remove and set aside.

  2. Grind all the ground spices into a paste.

  3. Sauté the ground spice paste briefly, then add bay leaves, kaffir lime leaves, lemongrass, and galangal. Stir well.

  4. Season with sweet soy sauce, soy sauce, sugar, and salt. Taste and adjust seasoning if necessary.

  5. Add the boiled fish head to the pan.

  6. Add tomato, pineapple, and bird's eye chilies.

  7. Heat through until ready and serve.
