Indonesian Banana Blossom Stew
Ingredients
- 2 medium banana blossoms
- 2 large green chilies
- 2 bay leaves
- 4 kaffir lime leaves
- 100 grams smoked fish
- 1 lemongrass stalk
- 1 thumb-sized galangal
- 1 packet instant coconut milk (65ml)
- 500-600 ml water
- sugar to taste
- salt to taste
- stock powder to taste
Ground spices
- 5 red shallots
- 4 garlic cloves
- 3 large red chilies
- 10 bird's eye chilies
- 2 cm turmeric
- 2 candlenuts
- 1 cm lesser galangal
- 1 teaspoon coriander seeds
Preparation
Peel the banana blossom layer by layer, take the white part, and cut as desired.
Boil until half tender, then drain.
Sauté the ground spices, galangal, kaffir lime leaves, bay leaves, and lemongrass until fragrant.
Add the chilies, banana blossom, and remaining ingredients, stir well, bring to a boil. Adjust taste and turn off the stove.
