Padang-Style Young Jackfruit Curry
Ingredients
- 250g parboiled young jackfruit
- 5 cabbage leaves
- 5 long beans
- 200g diced meat scraps
- 2 kaffir lime leaves
- 1 lemongrass stalk
- 2cm galangal
- 1500ml coconut milk
- 2 teaspoons beef stock powder
- Salt to taste
- Sugar if needed
Spice paste
- 8 shallots
- 3 garlic cloves
- 4 roasted candlenuts
- 2cm ginger
- 2cm turmeric
- 10 curly red chilies
Preparation
Sauté the ground spice paste, or skip sautéing if preferred
Add the meat scraps and stir until the color changes
Add the coconut milk and other spices
Bring to a boil
Add the jackfruit, cabbage, and beans
Cook on low heat until flavors are fully absorbed
Notes
Meat scraps do not need to be boiled first as they will become tender during the long cooking with jackfruit
