Minang-Style Chicken Curry
Ingredients
- 1 whole chicken
- 1 turmeric leaf
- 4 kaffir lime leaves
- 200 ml coconut milk
- 2 pieces gelugor tamarind
- Salt to taste
- Oil for frying
Ground
- 1 inch galangal
- 1 inch ginger
- 1/2 inch turmeric
- 2 large onions
- 4 cloves garlic
- 4 candlenuts
- 12 dried chilies
- 4 bird's eye chilies
- 4 stalks lemongrass
Preparation
Clean the chicken, cut to taste, and drain
Heat a little oil and fry the ground ingredients
Cook until the mixture is done and dry
Add the chicken, mix well, and let it cook
Pour in coconut milk with a little water to avoid it being too thick
Season with salt to taste, gelugor tamarind, and palm sugar; taste the sauce
Cook on medium heat until it boils and the sauce thickens
Ready to serve
Tips
Serve with compressed rice for a delicious meal
