Minang-Style Chicken Curry

Ingredients

  • 1 whole chicken
  • 1 turmeric leaf
  • 4 kaffir lime leaves
  • 200 ml coconut milk
  • 2 pieces gelugor tamarind
  • Salt to taste
  • Oil for frying

Ground

  • 1 inch galangal
  • 1 inch ginger
  • 1/2 inch turmeric
  • 2 large onions
  • 4 cloves garlic
  • 4 candlenuts
  • 12 dried chilies
  • 4 bird's eye chilies
  • 4 stalks lemongrass

Preparation

  1. Clean the chicken, cut to taste, and drain

  2. Heat a little oil and fry the ground ingredients

  3. Cook until the mixture is done and dry

  4. Add the chicken, mix well, and let it cook

  5. Pour in coconut milk with a little water to avoid it being too thick

  6. Season with salt to taste, gelugor tamarind, and palm sugar; taste the sauce

  7. Cook on medium heat until it boils and the sauce thickens

  8. Ready to serve

  1. Serve with compressed rice for a delicious meal
