Smashed Fried Chicken with Green Sambal
Ingredients
- 1 whole chicken
- Squeezed lime juice
- Oil as needed for frying
Spice paste
- 7 shallots
- 4 garlic cloves
- 3 cm ginger
- 3 cm galangal
- 2 cm turmeric
Green sambal
- 60g green bird's eye chilies
- 2 garlic cloves
- Salt to taste
- Sugar to taste
- Juice of 1 lime
Preparation
Blend the spice paste ingredients into a smooth paste.
Clean the chicken, cut it to your preference, and rub with squeezed lime juice. Set aside.
Boil the chicken with the spice paste, add water and salt, until tender. Drain.
Fry the chicken in oil until golden brown and cooked through. Remove from heat.
Smash the fried chicken using a mortar and pestle.
Top the smashed chicken with the prepared green sambal.
Green sambal
Fry the green bird's eye chilies until wilted.
In a mortar and pestle, pound the fried chilies, garlic, lime juice, salt, and sugar together until well combined.
Taste and adjust seasoning as needed.
