Indonesian Smashed Fried Chicken
Ingredients
- 4 pieces chicken (breast or thigh)
- 1 lime
- Oil for frying
Batter mix
- 100 grams all-purpose flour
- 3 tablespoons cornstarch
- 3 cloves garlic, minced
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon chicken bouillon powder
- 1/2 teaspoon salt
- Ice water as needed
Dry coating
- 100 grams all-purpose flour
- 3 tablespoons cornstarch
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Sambal
- 12 red bird's eye chilies
- 3 cloves garlic
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon tamarind water
Preparation
Marinate the cleaned chicken with lime juice and let it sit for about 15 minutes.
Prepare a bowl and mix all the batter ingredients until well combined.
Coat the marinated chicken in the batter mixture and refrigerate for 10-15 minutes.
Mix all the dry coating ingredients in a container until well combined.
Roll the chicken in the dry coating mixture and press until it adheres well.
Heat oil over low heat and fry the chicken until cooked and golden brown.
Pound all the sambal ingredients together, then smash the fried chicken into the sambal and serve.
