Green Chili Smashed Chicken Fillet

Ingredients

  • 500g chicken fillet, sliced thin
  • 2 eggs
  • 350g all-purpose flour
  • 1 lime
  • 1/2 tsp chicken seasoning (Royco)
  • Salt to taste
  • Oil as needed

Sambal

  • 300g green chilies
  • 1 small green tomato
  • 6 shallots
  • 3 garlic cloves
  • 4 kaffir lime leaves

Preparation

  1. Wash the chicken fillet and soak it in lime juice and salt for about 10 minutes.

  2. Boil the sambal ingredients briefly, then coarsely grind them.

  3. Heat a pan and sauté the sambal, add lime juice to taste, chicken seasoning, and kaffir lime leaves.

  4. Place the sambal in a mortar.

  5. Coat the chicken in flour, dip in beaten egg, and roll back in flour.

  6. Gently squeeze the chicken, then fry until golden brown.

  7. Lift the chicken, smash it into the sambal, stir well, and serve with warm rice.
