Smashed Fried Chicken with Green Chili Sambal

Ingredients

  • 500g chicken meat (cut into pieces)
  • 2 cloves garlic (crushed)
  • Water as needed (for braising chicken)
  • Salt to taste

Green sambal

  • 100g green chilies
  • 19 bird's eye chilies
  • 1.5 cloves garlic
  • 6 shallots
  • 2 small green tomatoes
  • 1 tsp lime juice
  • Salt and sugar to taste
  • Cooking oil

Preparation

  1. Wash the chicken thoroughly.

  2. Braise it briefly with crushed garlic and salt.

  3. Once the braising liquid is absorbed, turn off the heat and set aside until the steam dissipates.

  4. Fry the chicken until slightly dry and set aside.

  5. Fry the green sambal ingredients briefly except lime juice, then drain.

  6. Pound the sambal into a semi-smooth paste.

  7. Fry the paste again, add salt and sugar, stir-fry until cooked, and adjust the seasoning.

  8. Smash the fried chicken on top of the green sambal and drizzle with lime juice.
