Grilled Chicken Taliwang

Ingredients

Main

  • 1 whole chicken (kampung, pejantan, or local variety)

Ground spices

  • 10 curly chilies
  • 3 bird's eye chilies
  • 10 shallots
  • 4 garlic cloves
  • 2 inches of kencur
  • Grilled shrimp paste to taste (e.g., 1 piece)

Whole spices and other

  • 2 stalks lemongrass, bruised
  • 2 bay leaves
  • 3 kaffir lime leaves
  • Palm sugar to taste
  • 1 packet coconut milk
  • Salt to taste
  • Sweet soy sauce to taste
  • 1 lime

Preparation

  1. Clean the chicken and rub it with lime.

  2. Sauté all the ground and whole spices, except the coconut milk.

  3. Add the chicken.

  4. Add enough water to simmer the chicken, then add coconut milk. Optionally, add sweet soy sauce if desired.

  5. Turn the chicken until it is fully cooked and the sauce thickens.

  6. Prepare the grill and grill the chicken.

  7. Frequently baste the chicken with the simmering sauce to enhance flavor and spice penetration.

Tips

  1. For those who like tomato, add 1 tomato to the ground spices.
