Sweet Braised Beef Empal Gepuk
Ingredients
- 1 kg beef
- 3 bay leaves
- 4 kaffir lime leaves
- 1250 ml coconut milk (thin)
- 250 ml coconut milk (thick)
- 200 g palm sugar, grated
- 4 tbsp tamarind juice
- Salt to taste
- Stock powder to taste
Spice paste
- 15 shallots
- 7 garlic cloves
- 3 inches galangal
- 2 lemongrass stalks
- 5 candlenuts
- 2 tbsp coriander seeds
- 1 tsp black pepper
Preparation
In a wok, mix thin coconut milk, beef, spice paste, bay leaves, lemongrass, palm sugar, tamarind juice, salt, and stock powder. Cook until boiling, then reduce heat.
When beef is half tender, add thick coconut milk. Continue cooking.
After coconut milk reduces, remove beef and pound until fibers are visible.
Return pounded beef to the wok with remaining coconut milk sauce, cook until tender and sauce dries up.
Serving suggestions
Serve with a sprinkle of fried shallots, sayur asem, and shrimp paste chili.
