Spicy Indonesian Beef Rica-Rica

Ingredients

  • 800 g diced beef
  • 2-3 tbsp sweet soy sauce
  • Salt to taste
  • Palm sugar to taste
  • Mushroom stock to taste
  • Ground pepper to taste

Ground spices

  • 8 shallots
  • 5 cloves garlic
  • 3 candlenuts
  • Red chilies to taste (large, curly, and bird's eye)
  • A little ginger

Additional spices

  • 3 bay leaves
  • 1 bruised lemongrass stalk
  • 2 kaffir lime leaves, torn
  • 1 piece galangal, bruised

Preparation

  1. Sauté the ground spices and additional spices until fragrant and oil is released.

  2. Add the beef and stir until it changes color.

  3. Add sweet soy sauce, salt, palm sugar, mushroom stock, and pepper to taste, mix well.

  4. Add water until beef is partially submerged, bring to a boil and cook until beef is tender and liquid reduces, taste as you go.

  5. Ready to serve with warm rice.

Notes

  1. This dish can be made with other meats such as goat, chicken, duck, or goose according to preference.
