Practical Indonesian Jackfruit Stew

Ingredients

  • 1/4 young jackfruit
  • 5 chicken eggs
  • 250 grams beef cut into cubes
  • 1.5 liters coconut milk
  • 2 pieces palm sugar

Spice mix

  • 2 bruised lemongrass stalks
  • Kaffir lime leaves
  • Bay leaves
  • Galangal

Ground spices

  • 10 shallots
  • 5 garlic cloves
  • 3 candlenuts
  • 1 teaspoon coriander
  • 1 piece turmeric
  • Bird's eye chilies to taste

Preparation

  1. Boil the young jackfruit with a little oil applied to the pot to prevent sticking

  2. Boil the beef for 15 minutes, then discard the water

  3. Boil the chicken eggs as desired and set aside

  4. Add the boiled jackfruit, beef, spice mix, coconut milk, ground spices, and a little salt, then pressure cook for 12 minutes to 2 hours after the cooker starts hissing

  5. After the liquid slightly reduces, add the boiled eggs, stir well, then boil again for about 1 hour, add salt, sugar, and seasoning; if the color is not dark enough, add a little sweet soy sauce

Notes

  1. If not using a pressure cooker, boil for 2 to 3 hours until the liquid reduces
