Indonesian Beef Tongseng Stew
Ingredients
- 300g beef, cubed
- 3 cloves red onion, sliced thickly
- Cabbage, as needed
- 1 tomato, sliced
- Bird's eye chili, whole, as needed
- Water, as needed
- Oil for sautéing
- Salt
- Palm sugar
- Seasoning (e.g., MSG)
- 2 tbsp sweet soy sauce, add more if needed
- Lemongrass
- Galangal
- Bay leaves
Spice paste
- 1 tsp black pepper
- 3 cloves garlic
- 4 cloves red onion
- 1 cm turmeric
- 1 cm ginger
- 2 candlenuts
Preparation
Sauté the ground spices until fragrant.
Add beef, galangal, lemongrass, and bay leaves, then stir until beef changes color.
Add water as needed and wait until it boils.
Season with salt, seasoning, sugar, and soy sauce, stir well and wait until it boils, adjust taste and wait until beef is tender.
Add cabbage, tomato, sliced chili, and red onion slices, stir again, wait until the liquid reduces slightly, then remove from heat.
