Spicy Indonesian Chicken Feet Stew

Ingredients

  • 500 grams chicken feet

Spices

  • 20 bird's eye chilies (to taste)
  • 7 large red chilies (to taste)
  • 5 shallots
  • 6 garlic cloves
  • Ground pepper to taste
  • 3 kaffir lime leaves
  • 3 bay leaves
  • 1 galangal stalk, smashed
  • 2 tablespoons sweet soy sauce
  • 2 tablespoons granulated sugar
  • Salt to taste
  • 1 inch ginger, smashed
  • Basil leaves to taste
  • Oil for sautéing
  • Water as needed

Preparation

  1. Boil the chicken feet with water, crushed garlic, smashed ginger, and a little salt until soft.

  2. Coarsely blend the bird's eye chilies, red chilies, garlic, and shallots briefly to keep them coarse.

  3. Sauté all the coarse spices and complementary spices until fragrant, then add water and wait until it boils.

  4. Add the boiled chicken feet, then add salt, sugar, and pepper powder, and stir evenly.

  5. Wait until it boils again so the spices absorb better.

  6. Taste and serve if ready.
