Malaysian Chicken Feet Soup

Ingredients

  • Chicken feet or chicken (approximate amount)
  • Soup spice bundle (sup bunjut)
  • Four friends spices (4 sekawan)
  • 1-2 inches ginger (bundled)
  • Garlic (bundled)
  • Red onion (bundled)
  • 6 crushed black peppers
  • 6 crushed white peppers
  • Soup leaves and green onions
  • Smashed bird's eye chili
  • Salt or MSG to taste
  • Lime juice as needed

Optional additions

  • Carrots, tomatoes, potatoes, or other vegetables to taste

Preparation

  1. Place chicken feet or chicken in a pot, add water, soup spice bundle, salt or MSG to taste, and ginger, then boil until it comes to a boil.

  2. Sauté the four friends spices until fragrant and add them to the boiling broth.

  3. Cover the pot.

  4. Sauté garlic until fragrant, then add it to the broth and cover the pot again.

  5. Sauté red onion until fragrant and golden, add most of it to the broth and reserve some for serving.

  6. Add crushed black and white pepper.

  7. Cook until the meat is tender to your liking.

  8. Add lime juice and adjust seasoning to taste.

Tips

  1. You can add carrots, tomatoes, potatoes, or other vegetables as desired during cooking.

  2. Lime juice can be added at the end or during serving based on personal preference for acidity.
