Malaysian Mamak Style Chicken Soup
Ingredients
- One chicken
- Small packet of soup spices (25g)
- 2 tablespoons curry powder
- 1 tablespoon turmeric powder
- 1 tablespoon ground black pepper
- 2 shallots
- 4 cloves garlic
- 2-inch piece ginger
- 4 cardamom pods
- 2 star anise
- 3 coriander roots (each 3 inches long, avoid fine ones)
- 2 tablespoons or more wheat flour
- Chicken bouillon cube
- Salt
- Crushed chili
- Potatoes (quantity not specified)
- Carrots (quantity not specified)
- Water (quantity not specified)
Complementary
- Coriander leaves or green onions or soup leaves
- Fried shallots
Preparation
Blend all ingredients except cardamom pods and star anise
Sauté the blended mixture until fragrant
Add the chicken
Add potatoes, carrots, water, and season to taste
Cook until all ingredients are tender
Add the wheat flour dissolved in a little water
Adjust the thickness by adding more flour mixture as desired
Tips
Flour can be omitted if preferred, as the original cook did not use it
