Indonesian Lamb Soup
Ingredients
- 500g lamb meat
- 6 shallots, sliced
- 6 garlic cloves, minced
- 2 tsp ground pepper
- 1 star anise
- 1/4 nutmeg
- 3 cloves
- 1 cinnamon stick
- 1 tomato, quartered
- Water as needed
- Salt
- Green onions, sliced

Preparation
Sauté the sliced shallots until fragrant, then add the minced garlic, ground pepper, and nutmeg, and sauté until fragrant and cooked.
Boil the lamb meat with the cinnamon stick, star anise, and cloves until half-cooked. Add the sautéed spices and salt, stir well, and continue boiling until the meat is tender.
Add the carrots and potatoes, cook briefly, then add the tomato and green onions, check the seasoning, and serve with a sprinkle of fried shallots.
