Indonesian Beef Tetelan Soup

Ingredients

  • 1/4 kg beef tetelan
  • 1 star anise
  • 3 cardamom pods
  • 2 lemongrass stalks
  • 2 kaffir lime leaves
  • 1 liter coconut milk
  • 500 ml water
  • Water for first boil as needed

Spice paste

  • 5 shallots
  • 3 garlic cloves
  • 1 tablespoon coriander seeds, toasted with turmeric
  • 1 thumb-sized galangal
  • 1 thumb-sized ginger

Preparation

  1. Boil the beef tetelan until the water boils, then discard the water.

  2. Boil again with 500 ml water, add lemongrass, cardamom, kaffir lime leaves, and star anise, and cook on low heat until half tender.

  3. Sauté the spice paste until fragrant, then add it to the boiling mixture along with the coconut milk.

  4. Cook until the beef is tender, stirring occasionally to prevent the coconut milk from curdling.

Garnish

  1. Sprinkle with sliced celery leaves.
