Indonesian Yellow Vegetable Soup

Ingredients

  • 1 jicama
  • 1 portion stink beans, peeled and halved
  • 2 carrots
  • 8 green beans or to taste
  • 3 boiled eggs, peeled
  • 5 rib bones
  • 3 bay leaves
  • 1 thumb-sized galangal, smashed
  • 1800 ml coconut milk, adjust thickness to taste
  • Salt to taste
  • Sugar to taste

Ground spices

  • 10 shallots
  • 3 garlic cloves
  • Red chilies to taste
  • 1 thumb-sized turmeric
  • 2 candlenuts
  • 1 teaspoon shrimp paste

Preparation

  1. Boil the rib bones in boiling water briefly, then remove and drain.

  2. Sauté the ground spices, bay leaves, and smashed galangal until fragrant, add the rib bones, stir, and add the coconut milk.

  3. Cook the rib bones until tender, while continuously stirring to prevent the coconut milk from breaking.

  4. Then add the carrots and jicama, wait until they are slightly soft, then add the green beans, stink beans, and boiled eggs, add salt and sugar, taste, remove from heat, and serve with ketupat or lontong.
