Indonesian Style Oxtail Soup

Ingredients

  • 500g oxtail, cleaned
  • 3 carrots
  • 2 potatoes
  • 1200 ml water

Spice blend 1

  • 7 shallots, roughly chopped
  • 3 garlic cloves, roughly chopped
  • 3 cm ginger, crushed

Spice blend 2

  • 5 cloves
  • 7 cm cinnamon stick
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground pepper
  • 1 celery stalk, chopped
  • 2 green onions, chopped

Seasonings

  • Salt to taste
  • Sugar to taste
  • Mushroom seasoning to taste

Accompaniments

  • Sambal
  • Fried shallots
  • Chopped green onions
  • Emping

Preparation

  1. Boil sufficient water, add oxtail, cook for about 15 minutes, then discard the water.

  2. Sauté spice blend 1 until fragrant, then add boiled water and spice blend 2, and cook until boiling.

  3. Add oxtail, salt, sugar, and mushroom seasoning, cook until oxtail is almost tender, then add carrots, after some time add potatoes, and cook until potatoes are soft.

  4. Taste and adjust seasoning, remove from heat, and serve with fried shallots, green onions, emping, and sambal sprinkled on top.
