Indonesian Oxtail Soup

Ingredients

  • 500g oxtail, cleaned
  • 3 carrots
  • 2 potatoes
  • 1 tomato
  • 1200 ml boiled water

Spice mix 1

  • 7 shallots, roughly chopped
  • 3 garlic cloves, roughly chopped
  • 3 cm ginger, crushed

Spice mix 2

  • 5 cloves
  • 7 cm cinnamon stick
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground pepper
  • 1 stalk celery, chopped
  • 2 stalks green onion, chopped

Seasonings

  • Salt to taste
  • Sugar to taste
  • Mushroom seasoning to taste

Accompaniments

  • Chili sauce
  • Fried shallots
  • Green onion, finely chopped
  • Melinjo crackers

Preparation

  1. Boil water as needed, add oxtail, cook for about 15 minutes, then discard the boiling water.

  2. Sauté spice mix 1 until fragrant, then add boiled water, add spice mix 2, and cook until boiling.

  3. Add oxtail, salt, sugar, and mushroom seasoning, cook until oxtail is almost tender, then add carrots, after some time add potatoes, and finally add tomato.

  4. Taste and adjust seasoning, remove from heat, and serve with a sprinkle of fried shallots and green onion on top, accompanied by melinjo crackers and chili sauce.
