Spicy Thai-Style Beef Soup

Ingredients

  • 1 kilogram beef
  • 3 cardamom pods
  • 1/2 teaspoon coriander powder
  • 1/2 tablespoon black pepper powder
  • 1/2 tablespoon white pepper powder
  • 1-inch cinnamon stick
  • 2 cloves
  • 1 tomato
  • 5 bird's eye chilies
  • 2 crushed coriander roots
  • fried shallots, as needed
  • 1-inch crushed ginger
  • juice of 2 limes
  • 1 onion, roughly sliced
  • 1/2 tablespoon salt
  • 2 liters water
  • 1 celery stalk, cut short

Preparation

  1. Simmer the beef until tender. This takes a long time, and it is usually done earlier before the main cooking process. Remove any foam that rises to the surface with a spoon. Add more water if the liquid reduces.

  2. Add the cardamom pods, coriander roots, cinnamon stick, cloves, ginger, black pepper, white pepper, and coriander powder, then simmer again.

  3. Next, add the onion, celery stalk, and tomato, then simmer again.

  4. Add the bird's eye chilies and season with salt to taste.

  5. Pour the soup into bowls, squeeze lime juice over it, sprinkle with fried shallots, and serve with hot rice.

Tips

  1. If possible, make your own fried shallots as they are more fragrant and crispy.
