Malaysian Chicken Soto Soup
Ingredients
- 1 whole chicken
- 4 red shallots
- 3 garlic cloves
- 2-inch piece of ginger
- 1 cinnamon stick
- 1 star anise
- 3 cardamom pods
- 4 tablespoons soup spice mix
- Salt to taste
- Tamarind juice to taste
- 1 teaspoon white pepper powder
Preparation
Sauté the sliced ingredients with cardamom, cinnamon, and star anise until fragrant.
Add the dissolved soup spice mix.
Add the chicken and sauté briefly until it releases water.
Add two bowls of water.
Add salt and white pepper.
Cover and let it simmer.
When done, add tamarind juice and adjust seasoning to taste.
Once cooked, serve in bowls.
Tips
Garnish with fried bean sprouts, sambal kicap, sliced spring onions, and fried shallots.
Some people like to add shredded fried chicken for extra flavor.
