Indonesian Braised Chicken

Ingredients

  • chicken
  • 2 stalks lemongrass
  • 1 tamarind slice
  • salt
  • sugar

Blended spices

  • 2 large onions
  • 3 cloves garlic
  • 10-15 bird's eye chilies
  • 1/2 inch ginger
  • 1 inch fresh turmeric
  • 1 teaspoon fennel
  • 1 teaspoon cumin
  • 1 tablespoon coriander seeds

Preparation

  1. Sauté the blended spices and lemongrass until fragrant and color changes.

  2. Add the chicken and mix well to coat it with the sautéed mixture.

  3. Add water and tamarind slice.

  4. Season with salt and sugar.

  5. Cover the wok and cook until the sauce thickens and the chicken is tender.
