Spicy Indonesian Duck Rica Rica
Ingredients
- duck
- 15 bird's eye chilies
- 5 shallots
- 3 garlic cloves
- 3 candlenuts
- 1 teaspoon ground pepper
- 1 teaspoon ground coriander
- 0.5 teaspoon turmeric powder
- 1 piece galangal
- 0.5 piece ginger
- 3 bay leaves
- 3 kaffir lime leaves
- 1 tablespoon sweet soy sauce
- 1 tomato
- oil for sautéing
- 1 lemongrass stalk
- a little water
- basil (optional)
Preparation
Prepare the duck by cutting into pieces, briefly boiling, and washing clean.
Fry the chilies, garlic, shallots, and candlenuts briefly then pound them.
Heat oil and sauté all the spices until fragrant.
Add the duck and stir well.
Add sweet soy sauce and water as needed, then braise until the duck is tender and the spices are absorbed.
Adjust the seasoning to taste and serve.
Tips
Optionally add basil to taste.
