Spiced Chicken and Lentils

Ingredients

  • 1 kg chicken cut into quarters
  • 3 tablespoons corn oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1/2 teaspoon chopped ginger
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon chili
  • 3 cups broth
  • 1 cup crushed lentils
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped coriander
  • 2 tablespoons lemon juice

For serving

  • chapati bread

For garnishing

  • chopped coriander

Preparation

  1. In a medium-sized pot, put the oil and heat it over medium heat.

  2. Add the chicken and stir until golden brown. Remove to a plate and set aside.

  3. In the same pot, add the onion, garlic, ginger, garam masala, turmeric, and chili. Stir for 5 minutes until the spice aroma rises. Return the chicken to the pot and stir for 5 minutes.

  4. Add the broth and let it boil strongly.

  5. Add the lentils, salt, pepper, coriander, and lemon juice, then simmer on low heat until the chicken is cooked.

  6. Pour into a serving dish, sprinkle with coriander, and serve hot.
