Spicy Chicken and Potato Kibbeh
Ingredients
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 1 teaspoon chili, chopped
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup parsley, chopped
- 1/4 cup coriander, chopped
- 2 large boiled potatoes
- 2 cups shredded boiled chicken
- 1 large egg
- 3 tablespoons breadcrumbs, as needed
Coating
- 0.5 cup flour
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 1 egg
- 1 cup breadcrumbs
For frying
- Corn oil
Preparation
In a large bowl, mix the onion, garlic, chili, curry powder, salt, pepper, parsley, coriander, boiled potatoes, shredded chicken, egg, and breadcrumbs until well combined.
Form the mixture into small balls or patties.
Prepare the coating by mixing flour, salt, and pepper in one bowl, beating the egg in another, and placing breadcrumbs in a third bowl.
Coat each ball or patty first in the flour mixture, then dip in the beaten egg, and finally roll in the breadcrumbs.
Heat corn oil in a frying pan over medium heat.
Fry the coated balls or patties until golden brown and crispy on all sides.
Drain on paper towels and serve hot.
