Authentic Saudi Meat-Filled Samosa
Ingredients
- 1 packet samosa dough
Filling
- 1 tablespoon corn oil
- 500 grams ground meat
- 1 large chopped onion
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1 teaspoon crushed hot pepper
- 1 teaspoon black pepper
- 2 teaspoons salt
- 2 large chopped tomatoes
- 1 cup chopped parsley
- 1 cup chopped cilantro
- 1 cup chopped mint
- 1 large chopped sweet green pepper
- 2 bunches chopped carrots
Glue mixture
- 1 tablespoon flour
- 1 tablespoon water
Frying
- corn oil
Preparation
In a skillet or saucepan, heat the oil then add the meat and stir occasionally until it absorbs all liquids. Then add the onion and stir for a few minutes until it wilts. Add cumin, coriander, crushed hot pepper, black pepper, and salt. Stir to mix and let it cool.
Place the meat in a dish and add chopped tomatoes, parsley, cilantro, mint, sweet green pepper, and chopped carrots. Stir to mix.
In a small bowl, combine flour and a little water to make a soft paste.
Take a sheet of samosa dough, hold it with your left hand, fold it into a triangle, and then fold again to form a pocket.
Fill the pocket with the filling and continue folding the dough into a triangle until you reach the edge.
Apply a little of the glue mixture and seal the edge well.
In a suitable skillet, heat the corn oil.
Fry a few samosas until golden brown.
Serve warm.
