Authentic Saudi Meat-Filled Samosa

Ingredients

  • 1 packet samosa dough

Filling

  • 1 tablespoon corn oil
  • 500 grams ground meat
  • 1 large chopped onion
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 teaspoon crushed hot pepper
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • 2 large chopped tomatoes
  • 1 cup chopped parsley
  • 1 cup chopped cilantro
  • 1 cup chopped mint
  • 1 large chopped sweet green pepper
  • 2 bunches chopped carrots

Glue mixture

  • 1 tablespoon flour
  • 1 tablespoon water

Frying

  • corn oil

Preparation

  1. In a skillet or saucepan, heat the oil then add the meat and stir occasionally until it absorbs all liquids. Then add the onion and stir for a few minutes until it wilts. Add cumin, coriander, crushed hot pepper, black pepper, and salt. Stir to mix and let it cool.

  2. Place the meat in a dish and add chopped tomatoes, parsley, cilantro, mint, sweet green pepper, and chopped carrots. Stir to mix.

  3. In a small bowl, combine flour and a little water to make a soft paste.

  4. Take a sheet of samosa dough, hold it with your left hand, fold it into a triangle, and then fold again to form a pocket.

  5. Fill the pocket with the filling and continue folding the dough into a triangle until you reach the edge.

  6. Apply a little of the glue mixture and seal the edge well.

  7. In a suitable skillet, heat the corn oil.

  8. Fry a few samosas until golden brown.

  9. Serve warm.
