Fried Msakhan Chicken Pies

Ingredients

Dough

  • 3 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon instant yeast
  • 2 tablespoons powdered milk
  • 1 egg
  • 1 teaspoon vinegar
  • 1 1/4 cups water
  • 1/4 cup soft butter

Filling

  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 2 cups shredded boiled chicken
  • 1 tablespoon sumac
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fried pine nuts

Frying

  • Corn oil for frying

Preparation

  1. Combine all dough ingredients in a bowl, knead until smooth, and let rise in a warm place for about 1 hour or until doubled in size

  2. Heat olive oil in a pan, sauté the chopped onion until soft, then add shredded chicken, sumac, lemon juice, salt, black pepper, and fried pine nuts, cook for a few minutes until heated through

  3. After dough has risen, divide into portions, roll each out into circles, place filling in the center, fold and seal to form pies

  4. Heat corn oil in a deep fryer or large pan, fry the pies until golden brown on both sides, then drain on paper towels and serve
