Salami Stuffed Savory Pies
Ingredients
Dough
- 3 cups flour
- 1 teaspoon dried mint
- 1 tablespoon instant yeast
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 large egg
- 1/4 cup corn oil
- 1 cup warm milk
Filling
- 2 tablespoons olive oil
- 1 large chopped onion
- 2 cloves crushed garlic
- 1/2 large sweet green pepper, chopped
- 3 large chopped tomatoes
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon mixed spices
- 1 teaspoon ground coriander
- 1 tablespoon tomato paste
- 1 package salami
Topping
- 1 large egg
- 1 tablespoon toasted sesame seeds
Preparation
For the dough: In the mixer bowl, place 1.5 cups of flour and add the dried mint, instant yeast, sugar, salt, and baking powder. Attach the dough hook and run the mixer on low speed for a few seconds.
Add the egg, butter, and milk. Run the mixer on medium speed until dough forms, then gradually add the remaining flour until the dough pulls away from the sides. Run the mixer on low speed for 5 minutes.
Shape the dough into a disk, place it in an oiled bowl, cover with plastic wrap, and let it rise in a warm place for 60 minutes.
For the filling: In a large skillet, place the olive oil and onion, then put the skillet over medium heat. Stir the onion with a wooden spoon until softened. Add the garlic, green pepper, tomatoes, salt, pepper, mixed spices, coriander, and tomato paste. Stir until the green pepper softens, then add 1/4 or 1/2 cup of water. Cover and let the sauce simmer for 10 minutes.
On a floured surface, roll out the dough to about 1/2 inch thickness.
Using a round cookie cutter, cut the dough into an even number of circles.
Place half of the circles in a shallow baking tray.
Using a large spoon, place some filling on the circles, add a slice of salami on the filling, and cover with the remaining circles. Seal the edges well to prevent the filling from leaking during baking.
For the topping: In a small bowl, place the egg and mix until combined.
Using a kitchen brush, brush the pies with the egg mixture.
Bake in a preheated oven until golden brown and cooked through.
