Crispy Fried Mashed Potato Balls
Ingredients
- 2 medium potatoes
- 1/2 cup flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- a pinch of black pepper
- 1 large egg
- 5 tablespoons milk
For frying
- Corn oil
Preparation
In a deep pot, place a generous amount of water and add the potatoes. Boil the potatoes over medium heat until fully cooked. Peel the potatoes and, using a vegetable masher, mash them until smooth.
Take 1 cup of the mashed potatoes and place in a deep bowl. Add the flour, baking powder, salt, pepper, egg, and milk. Using a wide spoon, stir the ingredients until you get a cohesive, homogeneous dough.
In a deep skillet, heat the oil over medium heat. Using a small spoon, take portions of the dough and drop them into the hot oil to form balls. Make several balls at a time. Using a slotted spoon, turn the potato balls until they become golden brown.
Place the balls on a piece of paper towel to drain excess oil.
Serve immediately.
