Crispy Herbed Potato Patties
Ingredients
- 4 large potatoes
- 2 large eggs
- 1/4 cup flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed chili
- 1/2 teaspoon cumin
- 1/4 cup chopped dill
- 1/4 cup chopped parsley
For frying
- corn oil
Preparation
In a deep pot, place the potatoes and cover with water. Put the pot on medium heat and cook for 30 minutes until fully cooked. Let them cool slightly then peel while warm.
With your fingertips, break the potatoes into medium-sized pieces. Then use a fork to mash into very small pieces, leaving some for crunchiness.
Add the eggs, flour, salt, pepper, chili, cumin, dill, and parsley, and mix with a fork until well combined.
In a deep skillet, add oil to about 2 inches high and heat on medium heat.
Shape tablespoon-sized portions of the mixture into small patties and fry in hot oil until golden brown, flipping as needed.
Remove the patties and drain on paper towels.
Serve hot with ketchup or yogurt.
