Fried Potatoes with Coriander and Pepper
Ingredients
- 4 large potatoes, cut into small cubes
- 2 tablespoons olive oil
- 5 cloves garlic, crushed
- 1 small green pepper, finely chopped
- 1 teaspoon ground coriander
- 1/4 teaspoon cumin
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 1/2 cup chopped coriander
For frying
- Corn oil
Preparation
In a deep frying pan, add corn oil and heat on medium until hot.
Fry the potato cubes until golden brown.
In a wide pan, add olive oil and place it on the heat.
Add the potatoes to the garlic and stir gently.
Remove the pan from heat and add the chopped coriander.
Pour into a serving dish and serve.
