Tomato and Coriander Baked Potatoes

Ingredients

  • 3 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, crushed
  • 1 teaspoon ginger, crushed
  • 4 large tomatoes, peeled and chopped
  • 1 teaspoon tomato paste
  • 1 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon mixed spices
  • 1/4 teaspoon black pepper
  • 4 large potatoes, cut into thick slices
  • 3 tablespoons lemon juice
  • 1/2 cup chopped coriander

Preparation

  1. Set the oven rack in the middle and preheat the oven to 180°C. Prepare a medium-sized baking dish suitable for serving.

  2. In a wide pan, place the oil and set over medium heat. Add the onion, garlic, and ginger. Stir with a wooden spoon until the onion softens.

  3. Add the tomatoes, tomato paste, salt, cumin, mixed spices, and black pepper. Stir until the tomatoes are completely soft. Pour the tomato mixture into the dish.

  4. Arrange the potato slices on top of the tomatoes. Cover the dish with aluminum foil.

  5. Place the dish in the oven for 60 minutes until the potatoes are fully cooked.

  6. Drizzle with lemon juice and sprinkle with coriander, then serve alongside grilled chicken or steak.
