Pasta with Tomato Sauce
Ingredients
- 3 tablespoons olive oil
- 1 medium chopped onion
- 2 cloves crushed garlic
- 1 teaspoon crushed ginger
- 1 small hot pepper, finely chopped
- 3 large peeled and chopped tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon black pepper
- 1/4 teaspoon cardamom
- 4 cups chicken broth
- 500 grams spaghetti or fettuccine
Preparation
In a deep pot with a thick base, place the oil, onion, garlic, ginger, and pepper. Place the pot on medium heat. Using a wooden spoon, stir the onion until the aroma of garlic and ginger rises.
Add the tomatoes and tomato paste. Stir the tomatoes for 5 minutes until they soften completely.
Add the broth. Let the tomatoes cook with the broth for 10 minutes.
Add the pasta. Let the pasta cook on medium heat for 10 minutes or until fully cooked.
In a wide serving dish, pour the pasta and serve with grilled chicken.
