Oat Soup with Chicken and Tomato
Ingredients
- 1 cinnamon stick
- 6 mastic
- 1 teaspoon salt
- 2 chicken fillets
- 3 tomatoes
- 2 tablespoons butter
- 1 onion
- 2 garlic cloves
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/2 teaspoon coriander
- 1/2 cup oats
- 1/2 cup cream
For serving
- 1/4 cup parsley
Preparation
In a pot, place 4 cups of water, onion, mastic, and salt, and let it boil on medium heat. Add the chicken fillets, reduce heat, cover the pot, and leave until the chicken is cooked. Strain the broth and keep it, cut the chicken into small cubes, and set aside.
In a blender jug, place the tomatoes and a little water and blend to get tomato juice.
In a pot, heat the butter, add onion and garlic, stir until wilted, then add tomato juice, tomato paste, salt, pepper, cinnamon, coriander, cover the pot, and leave on low heat until it thickens.
Add the broth, oats, and stir well to mix. Continue stirring gently occasionally to prevent oats from sticking, and cook for about 20 minutes until oats are cooked and soup thickens. You can adjust the density as desired.
Add the chicken cubes and let it boil for 5 minutes.
Remove the soup from heat, add the cream, and serve with a little parsley.
