Chicken and White Bean Stew
Ingredients
- 3 tablespoons oil
- 1 medium onion, finely chopped
- 3 cloves garlic, chopped
- 1 chili pepper, finely chopped
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- 4 large chicken fillets, cut into large cubes
- 3 cups tomato juice
- 3 cups water
- 500 grams cooked white beans
Garnish
- 1/4 cup chopped cilantro
Preparation
In a large pot, add the oil and place over medium heat.
Add the onion and stir with a wooden spoon for 6 to 8 minutes until fully softened.
Add the garlic, chili, salt, black pepper, cumin, and cinnamon, then stir the mixture until the spices release their aroma.
Add the chicken and stir until it turns light golden.
Add the tomato juice, water, and white beans, then let the stew cook for 40 minutes until the chicken is cooked and the sauce thickens.
In a deep serving dish, pour the stew, sprinkle with cilantro, and serve with rice vermicelli.
