Tagine of Meat with Freekeh

Ingredients

  • 1 piece boiled thigh cut
  • 3 cups broth from boiling the thigh
  • 2 cups freekeh
  • 3 tablespoons olive oil
  • 2 large chopped onions
  • 3 crushed garlic cloves
  • 2 chopped green peppers
  • 1 teaspoon fine cardamom
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cinnamon
  • 2 tablespoons tomato paste
  • 2 cups tomato juice
  • Nuts for garnish

Preparation

  1. Wash the freekeh well and soak it in water for 30 minutes.

  2. In a small bowl, combine the cardamom, salt, black pepper, cumin, coriander, and cinnamon.

  3. In a pot suitable for the oven, heat the oil, add the chopped onion and stir until it wilts, then add the crushed garlic and chopped green pepper and stir until the garlic aroma is released.

  4. Add the boiled meat pieces and stir to combine with the mixture, then add the spice blend and stir briefly.

  5. Add the freekeh and stir with the meat, then add the tomato paste, tomato juice, and broth, bring to a boil, cover the pot, and bake in the oven at 180°C for one hour or until the freekeh is cooked.

  6. Pour the mixture into a serving dish and garnish with nuts.
