Tilapia Fish with Fisherman's Rice

Ingredients

  • 4 pieces tilapia fish

Spices

  • 1 tablespoon cumin
  • 1 tablespoon fish spice
  • 1 tablespoon salt
  • 1 tablespoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon crushed chili
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon black pepper

Marinade

  • 6 cloves crushed garlic
  • 1/4 cup lemon juice
  • 1/4 cup vinegar

Rice

  • 3 cups short-grain rice
  • 2 large chopped onions
  • 2 tablespoons sugar
  • 2 cloves crushed garlic
  • 1 medium grated carrot
  • 2 tablespoons chopped dill
  • 1 tablespoon salt

Frying and coating

  • corn oil for frying
  • flour for coating
  • starch for coating

Preparation

  1. In a bowl, place all the spices and mix them well then divide into two halves

  2. Clean the fish and open the belly

  3. In a container, place the garlic, lemon juice, vinegar, and half of the spice mixture, add a little water to make a liquid marinade and place the fish in it for one hour

  4. Remove the fish from the marinade and set it aside to drain, do not discard the marinade

  5. Add one cup of water to the marinade, add one teaspoon of salt, mix well to dissolve and set aside

  6. In a bowl, place about half a cup of flour and starch, coat the fish inside and out with the flour mixture, set aside then repeat the coating and shake off excess flour

  7. Heat oil in a wide skillet over medium heat, be cautious as the fish is coated with a watery marinade

  8. Dip each fish piece in the marinade for a few seconds to coat quickly, ensuring marinade enters the belly, then immediately place in the hot oil, repeat with remaining fish and fry until golden brown, flip to the other side

  9. In a pot, place half a cup of the oil used for frying the fish, add the onions and stir until browned, add the sugar and continue stirring until the sugar caramelizes

  10. Add the remaining spices, garlic, carrot, and dill, stir until the carrot wilts

  11. Add 3 cups of water, bring to a boil, add salt, add the rice and stir gently to absorb some water

  12. Cover the pot and cook the rice on low heat until fully done

Tips

  1. When frying the fish, ensure no water drops into the oil and stand at a safe distance from the skillet

  2. Use the oil from frying the fish for cooking the rice to enhance flavor
