Meat Tagine with Freekeh

Ingredients

  • 1 piece of boiled thigh meat
  • 3 cups broth from boiling the thigh
  • 2 cups freekeh
  • 3 tablespoons olive oil
  • 2 large chopped onions
  • 3 cloves crushed garlic
  • 2 chopped green peppers
  • 1 teaspoon ground cardamom
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cinnamon
  • 2 tablespoons tomato paste
  • 2 cups tomato juice

Preparation

  1. Wash the freekeh well and soak it in water for 30 minutes.

  2. In a small bowl, put cardamom, salt, black pepper, cumin, coriander, and cinnamon and mix the spices.

  3. In a suitable oven-safe pot, heat the oil, add the onion, stir until wilted, add garlic and green pepper, and stir until garlic aroma appears.

  4. Add the boiled meat pieces, stir to brown with the mixture, add the spice mixture, and stir a little.

  5. Add the freekeh and stir with the meat, add tomato paste, tomato juice, and broth, let it boil strongly, cover the pot, and place in the oven at 180°C for an hour until the freekeh is cooked.

  6. Pour the mixture into a serving dish and garnish with nuts.
