Chicken with Peppers and Tomatoes
Ingredients
- 1 kg boneless chicken, cut into pieces
- 1 teaspoon salt
- 1 teaspoon mixed spices
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed chili
- 3 tablespoons oil
- 3 tablespoons butter
- 2 large onions, sliced
- 1 teaspoon crushed garlic
- 1 teaspoon crushed ginger
- 1 medium green bell pepper, cubed
- 1 medium red bell pepper, cubed
- 2 large tomatoes, chopped
Preparation
In a wide bowl, place the chicken. Sprinkle the salt, spices, paprika, and chili. Using a wooden spoon, stir the chicken pieces to coat them with the spices.
In a wide skillet, place the oil and butter. Put the skillet on medium heat to heat the oil. Add the chicken pieces to the oil and stir until golden brown.
Add the onion, garlic, ginger, and peppers. Stir the vegetables with the chicken for one or two minutes.
Cover the chicken and reduce the heat. Let the chicken cook for 30 minutes.
Add the chopped tomatoes. Cover the chicken again and let it cook for 10 minutes.
Serve the chicken with white rice.
