Roasted Tomato and Hummus Pasta
Ingredients
- 300 g cherry tomatoes
- 1 C hummus
- 1 pepper
- 2 cloves garlic
- 1 T mixed Italian herbs
- 1/2 T harissa spice
- 1 C breadcrumbs
- Salt and pepper to taste
- Olive oil
- Portion for 2 cooked pasta
Preparation
Mix together cherry tomatoes, pepper, garlic, herbs, harissa, salt and pepper in a baking dish. Drizzle with olive oil and roast in a preheated oven at 200°C for 30-35 minutes.
Mix in hummus and cooked pasta. Top with breadcrumbs and return to oven to cook until breadcrumbs are golden.
