Roasted Tomato and Hummus Pasta

Ingredients

  • 300 g cherry tomatoes
  • 1 C hummus
  • 1 pepper
  • 2 cloves garlic
  • 1 T mixed Italian herbs
  • 1/2 T harissa spice
  • 1 C breadcrumbs
  • Salt and pepper to taste
  • Olive oil
  • Portion for 2 cooked pasta

Preparation

  1. Mix together cherry tomatoes, pepper, garlic, herbs, harissa, salt and pepper in a baking dish. Drizzle with olive oil and roast in a preheated oven at 200°C for 30-35 minutes.

  2. Mix in hummus and cooked pasta. Top with breadcrumbs and return to oven to cook until breadcrumbs are golden.
