Fried Potatoes with Coriander and Pepper

Ingredients

  • 4 large potatoes, cubed small
  • 2 tablespoons olive oil
  • 5 cloves garlic, crushed
  • 1 small green pepper, finely chopped
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup chopped coriander

Frying oil

  • Corn oil for frying

Preparation

  1. In a deep frying pan, put an amount of oil to a height of about 2 inches.

  2. Place the pan on medium heat until the oil is well heated.

  3. Fry the potato cubes until golden.

  4. In a wide pan, put oil and heat on medium heat, then add garlic, green pepper, ground coriander, cumin, black pepper, and salt; stir with a wooden spoon until fragrant.

  5. Add the fried potatoes to the garlic mixture and stir gently to combine.

  6. Remove the pan from heat and add chopped coriander, then stir gently to mix.

  7. Serve in a dish with Arabic bread.
