Potato Salad with Mustard Sauce

Ingredients

  • 4 medium potatoes
  • 4 tablespoons finely chopped dill
  • 4 tablespoons finely chopped parsley
  • 4 medium green onion stalks, chopped with leaves

For serving

  • spinach or lettuce

Mustard sauce

  • 4 garlic cloves
  • 1/4 cup white vinegar
  • 1/4 cup fresh lemon juice
  • 1/4 cup mustard paste
  • 1/4 cup corn oil
  • 1/4 cup olive oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon onion powder

Preparation

  1. In a large pot, boil about 6 cups of water, add 2 teaspoons of salt, add the potatoes and cook on medium heat until done

  2. Do not peel the potatoes or peel them if desired, then cut into approximately 1-inch cubes

  3. Place some lettuce or spinach in a wide serving dish

  4. Place potato cubes evenly on top with some sauce, dill, parsley, and green onion distributed between layers

  5. For the mustard sauce, place garlic in a blender jar, add vinegar, and blend until garlic is very smooth

  6. Add lemon juice, mustard, oils, sugar, salt, pepper, and onion powder, then blend until well mixed

Tips

  1. Chill the sauce in the fridge for an hour before use to improve flavor

  2. Prepare the sauce up to two days in advance and store in a glass jar in the fridge

  3. Optionally add drops of yellow food coloring depending on the type and color of the mustard paste used
