Fried Potato Salad with Peppers
Ingredients
- 4 large potatoes
- 1/4 cup olive oil
- 1/2 medium sweet red bell pepper, cubed
- 1/2 medium sweet green bell pepper, cubed
- 1/2 medium sweet yellow bell pepper, cubed
- 4 cloves garlic, crushed
- 2 cups fresh cilantro, chopped
- 1 teaspoon salt
- 1 teaspoon hot sauce
- 1 green chili pepper, finely chopped
- Corn oil for frying
Preparation
Peel the potatoes using a vegetable peeler and cut them into small cubes with a sharp knife, then place in salted water until ready to cook.
In a deep frying pan, add oil to a depth of about 2 inches and heat over medium heat.
Fry the potatoes in batches until golden brown, then remove with a slotted spoon and drain on paper towels.
In a wide pan, heat olive oil over medium heat.
Add the mixed bell peppers and stir for a few seconds to soften, then add garlic, cilantro, salt, hot sauce, and green chili and stir to combine.
Add the fried potatoes and stir briefly to mix with the vegetables.
Serve the potato salad cold in individual plates.
