Lettuce Salad with Walnut Dressing
Ingredients
- 1 large head lettuce
- 1 green onion
- 1 medium red bell pepper
- 1 medium tomato
- 1 cup roasted walnuts
Walnut dressing
- 1 large onion
- 2 tablespoons vinegar
- 2 teaspoons fine-grained sugar
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1 teaspoon mustard paste
- 1 cup olive oil
Preparation
In a deep bowl, place the lettuce, onion, pepper, and tomato. Using a wooden spoon, mix the vegetables so they combine to form the salad.
In a wide serving dish, place the salad. Spread the roasted walnuts.
Drizzle the walnut dressing over the salad and serve.
Dressing
In a food processor bowl, attach the steel blade. Place the onion. Run the processor on medium speed until the onion is very smooth. Through the feed tube and with the processor running, add the vinegar, sugar, salt, pepper, oil, and walnuts. Continue running until a homogeneous and smooth sauce forms.
